This creamy rice is a delicious side dish to serve with grilled fish. It can also be made into a complete vegetarian dish by simply adding red beans.

Ingredients

Carolino rice
200 grams
Tomato
400 grams
Red bell pepper

Onion

Water
600 milliliters
Olive oil
2 tablespoons
Bay leaves

Salt
to taste
Pepper
to taste

Preparation steps

  • Step 1 : Finely chop the Onion and cut the Red bell pepper into small pieces.
  • Step 2 : Cut the Tomatoes into small pieces. You can use fresh ripe tomatoes or whole peeled canned tomatoes, especially in winter.
  • Step 3 : In a pot, put the Olive oil, Onion and Bay leaves. Cook for a few minutes over medium heat, then add the Red bell pepper.
  • Step 4 : Add the Tomatoes and Carolino rice and cook again for a few minutes.
  • Step 5 : Add Water, Salt and Pepper. Let cook, stirring a little. When the water starts to boil, put on low heat and let cook covered for about 15 minutes.
  • Step 6 : Remove from heat and let stand a few minutes before serving.
