Preparation steps

  • Step 1 : Start by cooking the sauce. Dice the Onions and Cloves of garlic and put them in a saucepan. Add the Bay leaf, Meat stock, Tomato paste, Port wine, Beer and Chili pepper.
  • Step 2 : Cook over medium heat for 30 minutes, then remove the Bay leaves. Blend until you get a homogeneous sauce. You can thicken it with a tablespoon of flour if it is too liquid.
  • Step 3 : While the sauce is on the stove, cook the Pork cutlets in a pan.
  • Step 4 : Make up the Francesinhas, placing in order a slice of Soft Bread, a slice of Ham, a Sausage cut lengthwise, a Pork cutlet, again a slice of Soft Bread and finally 4 slices of Edam on top.
  • Step 5 : Put the francesinhas in the oven at 200°C and leave them until the cheese melts. To finish, take out the francesinhas and cover them with the sauce. They are traditionally eaten with French fries.
