Codfish
800 grams
Potato
800 grams
Onions

Cloves of garlic

Black olives

Olive oil
6 tablespoons
Frying oil
1 liter

Preparation steps

  • Step 1 : Cook the Codfish in boiling water for about 10 minutes. Allow to cool slightly, then remove the bones and skin. Cut into small pieces.
  • Step 2 : Peel the Potatoes and cut them into very thin French fries. Fry in hot oil.
  • Step 3 : Cut Onions in half, then into strips. Finely chop garlic and Parsley.
  • Step 4 : In a saucepan, pour the Olive oil and cook the Onions and garlic for a few minutes. Add the Codfish and cook for another 2/3 minutes over medium heat. Finally, add the French fries and mix gently.
  • Step 5 : Beat the Eggs into an omelette and add half the Parsley, Salt and Pepper. Pour this mixture into the pan and mix well. Let cook on low heat for a few moments.
  • Step 6 : Remove from heat and serve in a dish. Add remaining Parsley and Black olives.
