Ingredients

Flour
500 grams
Milk
100 milliliters
Sugar
140 grams
Eggs
4
Unsalted butter
100 grams
Fresh Yeast
25 grams
Grated coconut
100 grams
Salt
1 pinch
Icing sugar
to taste

Preparation steps

  • Step 1 : In a bowl, crumble the Fresh Yeast and add 1 tablespoon of Flour and 1 tablespoon of Sugar. Pour in the warm Milk (not too hot) and mix well. Cover with a cloth and let rest for about 15 minutes.
  • Step 2 : In a large bowl, pour the Flour with 100 grams of Sugar and the Salt. Mix and pour in 2 whole Eggs (beaten), 75 grams of melted Unsalted butter and then the yeast.
  • Step 3 : Mix by hand until the dough is smooth and not too sticky. Work the dough on a floured work surface for 5 to 10 minutes.
  • Step 4 : Let the dough rise in a large floured bowl for 1h30/2h. Cover with a cloth and wrap in a blanket to keep warm.
  • Step 5 : When the dough has doubled in volume, remove it from the bowl and work it lightly by hand to remove the air. Cut out 12 small balls of the same size (about 80g).
  • Step 6 : Round the balls of dough by hand and place on a baking sheet covered with baking paper. Let rest for 30 minutes more, covering with the cloth.
  • Step 7 : In a bowl, mix the Grated coconut, 40 grams of Sugar, 25 grams of melted Unsalted butter and one whole Egg. Whisk the other Egg in another bowl.
  • Step 8 : With a brush, place egg on each ball of dough, then coconut filling.
  • Step 9 : Bake at 180° for about 15 minutes then sprinkle with Icing sugar.
