Ingredients

Carolino rice
200 grams
Milk
1 liter
Sugar
200 grams
Egg yolks
4
Unsalted butter
40 grams
Water
50 centiliters
Cinnamon stick
1
Lemon zests
2
Cinnamon powder
to taste
Salt
1 pinch

Preparation steps

  • Step 1 : In a pan, pour the Water and Salt and put on the heat. When the water is boiling, add the Carolino rice and cook over medium heat, uncovered, until the water is completely absorbed.
  • Step 2 : Add the Cinnamon stick and Lemon zests to the pan. Put on low/medium heat and gradually pour the Milk into the pan. The rice should absorb the milk as it goes, like a risotto. Stir gently without stopping.
  • Step 3 : When you have poured most of the milk, add the Sugar and Unsalted butter and mix well for 2/3 minutes. Pour in the remaining milk and mix again.
  • Step 4 : Beat the Egg yolks in a bowl, then add a little rice to incorporate them gently so that they do not cook. Pour this mixture little by little into the pan, mixing well.
  • Step 5 : When the rice has absorbed all the milk and remains creamy, pour into a dish and let cool.
  • Step 6 : Decorate with Cinnamon powder, and it's ready!
