This delicious recipe, typical of the Aveiro region, is sure to win you over. Similar to pancakes, tripas can be eaten plain with a little cinnamon, or filled with sugar, chocolate or jam.

Ingredients

Eggs
3
Flour
250 grams
Sugar
100 grams
Milk
50 centiliters
Unsalted butter
60 grams
Salt
1 pinch
Cinnamon powder
to taste

Preparation steps

  • Step 1 : Mix the Eggs and Flour in a bowl.
  • Step 2 : When the mixture is smooth, stir in the cold Milk a little at a time.
  • Step 3 : Add the Sugar, melted Unsalted butter and Salt.
  • Step 4 : Leave the dough to rest for 30 minutes.
  • Step 5 : In a lightly greased frying pan, ladle batter until 4 to 5 millimeters thick.
  • Step 6 : When small bubbles begin to form on the surface, turn it over with a spatula.
  • Step 7 : If you wish to fill the tripa, add the filling directly on top and seal it like an envelope.
  • Step 8 : Serve hot and sprinkle with Cinnamon powder if you like.
