Bolos de arroz

This Portuguese "muffin" with rice flour goes perfectly with coffee and tea, for a sweet and tasty break.

Ingredients

Rice flour
100 grams
Flour
150 grams
Unsalted butter
150 grams
Sugar
120 grams
Eggs
3
Milk
100 milliliters
Baking powder
1 teaspoon

Preparation steps

  • Step 1 : Beat the softened Unsalted butter with the Sugar until creamy. If you didn't think to take the butter out of the fridge a little before cooking, you can put it in the microwave for a few seconds.
  • Step 2 : Add the Eggs and mix well.
  • Step 3 : Then add the wheat Flour, Rice flour and Baking powder. Mix well, then add the Milk. Mix again.
  • Step 4 : Pour the mixture into the moulds. Ideally, use stainless steel pastry circles (6 cm in diameter) in which you place a strip of baking paper (21 cm x 6 cm).
  • Step 5 : Sprinkle each cake with a teaspoon of Sugar.
  • Step 6 : Put in the oven at 180°C, for 15 to 20 minutes.
  • Step 7 : Enjoy with a coffee or tea :)
