This meat-filled bread originates from the Trás-os-Montes region, in northern Portugal, is traditionally eaten at Easter.

Ingredients

Flour
1 kilogram
Eggs
12
Olive oil
20 centiliters
Unsalted butter
150 grams
Salt
to taste
Fresh Yeast
45 grams
Chouriço
to taste
Bacon
to taste
Dry Cured Ham
to taste

Preparation steps

  • Step 1 : Start by mixing the Fresh Yeast in a little warm water for a few minutes.
  • Step 2 : In a large bowl, pour the Flour and Salt. Make a well and pour in the Fresh Yeast. Knead by hand. Then add the liquid ingredients; the beaten Eggs, Olive oil and melted Unsalted butter. Continue to knead well by hand between each ingredient.
  • Step 3 : When the dough is homogeneous, place it in a clean and greased bowl, sprinkle with flour and cover with a cloth. Let rise the dough in a warm place until it doubles in volume (about 1 to 2 hours).
  • Step 4 : Roughly roll out dough on a lightly floured counter. Place small pieces of meat on the dough. You can use chorizo, bacon, or any smoked meat you like.
  • Step 5 : Fold the dough to cover all the meat and shape it into a ball.
  • Step 6 : Bake at 180°C for about 45 minutes.
