Preparation steps

  • Step 1 : Start by immersing the Codfish in water for 24-48 hours to desalinate it. Change the water every 2 to 3 hours. For simplicity, you can use frozen cod, ready to cook.
  • Step 2 : Cook the peeled Potatoes in boiling water. Once cooked, set aside.
  • Step 3 : Boil the Codfish in water for 10 minutes. Remove from heat and let cool for a few minutes. Remove the bones and skin and place the cod in a clean cloth. Fold the corners together to form a ball, then squeeze out any excess water.
  • Step 4 : Mash Potatoes with a fork. Finely chop Onion, Cloves of garlic (optional) and Parsley. Beat the Eggs.
  • Step 5 : Mix all ingredients together, Codfish, Potatoes, Onion, Cloves of garlic, Parsley and Eggs. We obtain a thick and regular paste. Add salt and pepper to taste.
  • Step 6 : Form balls of about 5cm in diameter by hand or with 2 spoons.
  • Step 7 : Fry in a deep fryer (or in a pan with 5 cm of oil) putting only a few at a time. Remove them when they are well browned.
