Preparation steps

  • Step 1 : Preheat oven to 180°C.
  • Step 2 : To prepare the caramel, put 125 grams of Sugar and 25mL of Water in a saucepan. Bring to a boil without stirring. When the caramel takes a nice golden color, add 50mL of Water (be careful as this can spit.). Stir only by turning the pan. Remove from heat and let cool.
  • Step 3 : Separate the yolks from the egg whites. Beat the egg whites, gradually adding 25 grams of Sugar. When they are stiff, add a large tablespoon of caramel and continue beating until you have a smooth mixture.
  • Step 4 : In the molotof mold, pour the rest of the caramel and spread it well.
  • Step 5 : Pour the mixture into the molotof mold. To evacuate the air, tap it on a work surface covered with a cloth.
  • Step 6 : The Molotof is cooked in a bain-marie, so place it in a large dish filled with a little water. Cook for 6 minutes in the oven - 1 minute per egg white.
  • Step 7 : After baking, leave the molotof in the oven turned off for another 10 minutes. Then open the oven door and leave for 5 minutes, so as not to cause thermal shock.
  • Step 8 : Let cool completely, then carefully remove from mold.
