Flour
400 grams
Water
240 milliliters
Fresh Yeast
25 grams
Salt
8 grams
Chouriço
200 grams
Preparation steps
- Step 1 : Dissolve Fresh Yeast in Water, at room temperature.
- Step 2 : Add half the Flour and Salt. Mix well until you obtain a homogeneous mixture.
- Step 3 : Add the remaining Flour and mix with a wooden spoon. Knead the resulting dough for 20 minutes by hand, or 8 minutes in a food processor. The dough should be smooth and elastic.
- Step 4 : Let the dough rest for 1 to 2 hours in a covered bowl, in a warm place.
- Step 5 : Remove the skin from the Chouriço and cut it into very thin slices.
- Step 6 : Cut the dough into 5 equal parts (about 100g) and roll them out into circles about 15cm in diameter.
- Step 7 : Place the slices of Chouriço on the dough. Roll the dough to form baguette-shaped rolls.
- Step 8 : Place the breads on a baking sheet lined with baking paper. Cover with a damp cloth and let stand for another 45 minutes.
- Step 9 : Preheat oven to 200°C.
- Step 10 : Before putting the breads in the oven, cut the dough 3 or 4 times on the top. Bake for about 20 minutes at 200°C.
