Ingredients

Pineapple
1 can
Flour
250 grams
Eggs
6
Sugar
200 grams
Unsalted butter
150 grams
Baking powder
1 pack
Salt
1 pinch

Preparation steps

  • Step 1 : Start by preparing the caramel. Put 100 grams of Sugar and 2 tablespoons of water in a saucepan. Mix only by turning the pan. When the sugar turns a nice golden color, pour into the cake mold (buttered if necessary) and let it cool.
  • Step 2 : Preheat oven to 180°C.
  • Step 3 : Drain the Pineapple and save the juice. Place pineapple slices in the bottom of the mold, on the caramel.
  • Step 4 : Separate Egg whites and yolks. In a bowl, mix the egg yolks with 100 grams of Sugar until the mixture turns creamy. Then add the Unsalted butter cut into pieces. Mix until you get a smooth cream.
  • Step 5 : Add Flour and and half a packet of Baking powder and mix until smooth.
  • Step 6 : Beat egg whites with a pinch of salt. Gently add to the mixture.
  • Step 7 : Pour the mixture into the mold and bake at 180°C for about 40 minutes.
  • Step 8 : When the cake is cooked, prick the top with a fork and pour the pineapple juice to taste.
  • Step 9 : Let cool, then carefully unmold the cake.
