Preparation steps

  • Step 1 : Cut the Onion and Cloves of garlic into small pieces. Fry them for a few minutes in a saucepan with Olive oil and add the Bay leaf. Leave on a low heat.
  • Step 2 : Peel the Tomatoes (choose ripe and large ones), cut them into pieces and add them to the pan. Salt the mixture with coarse Salt and leave it on the fire.
  • Step 3 : Peel the Potatoes and cut them into slices or medium-sized pieces. Put them in the pan and add water to just cover the vegetables. Let cook for about 15 minutes, covered.
  • Step 4 : When the Potatoes are cooked, break the Eggs and pour them one by one directly into the pan. Cover again and cook for about 5 more minutes.
  • Step 5 : Serve the soup in a large bowl or soup plate, pouring it over slices of Bread placed at the bottom.
