Ingredients

Puff pastry

Flour
30 grams
Sugar
150 grams
Egg yolks

250 milliliters
Water
75 milliliters
Lemon zest

Preparation steps

  • Step 1 : Preferably choose a rectangular Puff pastry. Roll it on itself and cut it into 12 equal portions. Spread each portion of dough in a buttered Nata pan, so as to line the whole pan. You can also use muffin pan.
  • Step 2 : In a saucepan, heat 150ml of Milk with the Lemon zests. In a separate bowl, dissolve the Flour with the remaining 100ml of Milk. When the milk/lemon mixture starts to boil in the pan, add the flour/milk mixture and stir without stopping until the mixture thickens.
  • Step 3 : Remove the Lemon zests from saucepan, then sift mixture to ensure no lumps. Set aside.
  • Step 4 : Place Water and Sugar in another saucepan and heat. Bring the mixture to a boil and leave it on the heat for another 4 minutes before removing it. Pour this mixture over the cream (1st preparation), without stopping to stir. Let cool.
  • Step 5 : Finally, add the Egg yolks and mix vigorously. Pour into molds, not quite to the top of the puff pastry.
  • Keep the egg whites to make an express chocolate mousse or small meringues.
  • Step 6 : Put in the oven at 230°C for about 15 minutes.
  • You can add a little powdered cinnamon to the Pastel de Nata just before eating it.
